Banana cake with salted caramel sauce


Today is my dad's 54'th birthday. I wanted to treat him to something yummy on his special day, but he isnt much of a sweet tooth so options are, well, quite limited. He does love cinnamon, and caramel, carrot cake and bananas. Caramel I think is the only thing you can catch him eating randomly out of the fridge. .. so, i decided to make use of some gorgeous very ripe bananas I bought the other day. A very fluffy banana cake that keeps great moisture and goes perfectly with a salted caramel salt. Try it... believe me, its really good. 





Banana cake with Salted Caramel sauce
Ingredients:
-2 very ripe big bananas 
-1 cup of buttermilk 
-2 cups of flour 
-1  tsp baking powder
-1/2 tsp salt
-1 tsp cinnamon 
-110 gr of butter
-1 cup and a half of sugar
-2 eggs
-1 tsp vanilla essence 

For the salted caramel sauce:
-1/2 condensed milk tin 
-4 o 5 tsp of milk
-2 or 3 tsp caramel 
-a splash of milk
-1 tsp of salt

Directions:
-Heat the oven to 350F and prepare a cake pans with non-stick spray.
Peel your ripe bananas and mash then with a fork until they are mostly mush. 
-Pour the buttermilk into the bananas and mix well.  Set aside.
-Sift the flour, baking powder, baking soda, and salt in a large bowl and set aside.
-In the bowl of a stand mixer cream the butter and sugar until well mixed and lighter in color.  Add the eggs one at a time and then the vanilla.  Mix well.  Add the dry ingredients and the banana mixture in three installments, starting and ending with the dry ingredients.
-Place mixture in a prepared baking pan.
-Bake for 35 to 40 minutes, or until the cake springs back when lightly pressed and pulls away from the sides of the pan.


-For the caramel sauce, mix all ingredients and microwave for a couple of seconds at a time
