I'm home alone this week so on Sunday I went to my parents' house for lunch as usual, but decided to stay most of the afternoon and treat them with cookies for a change (they do complain that they read and hear a lot about my cookies but never get to try them). Obviously they were not quite prepared for the ocassion so I mostly had to improvise. Not at all dissapointed, I had almonds, sugar, eggs and not much butter but enough to work with, the cookies came out super good, so I kept the recipe for whenever I feel like almond cookies !! They're really easy to make, they dont take long, and they're a great treat for tea, or watching a movie while sipping coffee.
Here's the recipe:
Almond Cookies
Yield: 3 dozen cookies
-60gr of butter
-1/2 cup sugar
-1/2 brown sugar
-1 egg
-1 tsp vanilla extract
-2 tsp maple syrup
-1 cup bread flour
-3/4 self rising flour
-3/4 cups chopped almonds.
Instructions:
-Cream butter and sugars until light and fluffy
-Add egg and blend until smooth
-Add vanilla extract and maple syrup
-Sift flours together and add the mixture in two or three times and mix well
-Add chopped almonds
-Spoon the cookie dough over parchment paper on a cookie sheet (about a small spoonfool is good)
-Bake in a 180 C oven for 8-10 min or until edges start to turn golde brown
-Let cool on a cool surface
