After waking up later than usual and feeling like I lost all morning doing nothing, I decided to make the rest of my day a date with my kitchen. I started with a big breakfast, followed by a very late fish pie for lunch, and then it was time for the blog. I browsed some sites, looked at several books, and decided for a super simple cookie dough that works for shaping, filling and decorating. I made orange cookies decorated with dark chocolate and rasberry filled cookies with chocolate decorations. Lets go to the recipes shall we?
Orange cookies and raspberry filled bites
Ingredients:
-2 cups flour
-2 tsp baking powder
-60 gr butter (softened, not melted)
-60 ml milk
-150 gr sugar
-1 egg
-1 tsp orange essence
-Raspberry jam
-30 grs of melted chocolate for decorating
Directions:
-Cream butter, sugar and orange essence until light and fluffy
-Add egg and beat until blended
-Add dry ingredients alternating with milk to make a soft dough
-Preheat oven to 180C
-Make small balls of dough and place on a greased baking sheet. Press you finger to form a little hole and fill up with jam.
-For the shaped cookies, put dough into cookie press and use desired shape, pressing cookies onto parchment paper on a cookie sheet
-Bake cookies for 10 minutes or until edges start to turn golden
-Let cool and decorate with melted chocolate
