Lemon must be one of my absolute favorite things to use in the kitchen. It goes so well with so many textures and flavors, it´s become a staple ingredient in my kitchen (almost like having sugar, eggs, butter and flour). Yesterday I only had one lemon left but I was craving something citric, so I decided to bring out the goodies, and opened up a bottle of organic lemon essence I brought back from my NY trip recently. I played around with some ideas but finally decided to try out a recipe for lemon blondies and add some condensed milk into the mix to add moistness and flavor. Results? Quick, easy and absolutely adorable squares that I finished with some lemon glaze to make them extra cuter. Let’s get to it, shall we?
(Makes 14 blondies)
Ingredients:
-80 gr butter
-110 gr sugar
-2 eggs
-1 generous cup of flour
-1 tsp baking poder
-1 tsp vanilla essence
-4 tsps lemon juice
Directions:
-Beat butter and sugar until light and fluffy
-Add the eggs one by one, beating well to incorporate fully
-Add the lemon essence
-Sift flour and baking powder and add to the mix in several times making sure not to get any lumps in it (dough should be almost like a cookie dough at this point)
-Spread on a greased brownie tray
-Bake in a 180C oven for 25 to 30 minutes. (you should be able to introduce a knife and it should come out clean)
-while they cool, prepare a simple lemon glaze (all you need is confectioner´s sugar and a couple drops of lemon to get a sticky mixture that will harden when it dries out).
-Spread glaze and cool in fridge for a couple of minutes before cutting them into desired size
