Michelle came to me last week asking for something very specific. She wanted a recipe for Chocolate Chip Chocolate Muffins to bake for her brother's birthday. I then realized that this recipe was missing in Cookie Sundays so I decided to make it a Sunday Project for her to have the recipe online and be able to share with all of you chocolate addicts as well. These are pretty simple. My only warning is if you're baking a big batch, have some people over, or you'll end up lying in bed with a food coma from eating too many. Otherwise, share and enjoy!
Recipe
(Makes 12 muffins)
Ingredients:
-115 gr of butter
-75 gr chopped chocolate
-200 gr sugar
-1 egg slightly beaten
-1 cup of milk
-2 tsp vanilla extract
-2 and 1/2 cups of flour (275 gr)
-1 tsp baking powder
-50 grs dark chocolate chopped
Directions:
-Preheat oven 190 C
-Melt butter and chocolate in a small pan, when chocolate is melted remove from heat and let cool slightly.
-Stir in sugar, egg, milk and vanilla.
-Gently fold in flour, baking powder until just blended
-Spoon batter into paper cases in a muffin tin-pan (fill only 2/3 so that they can rise)
-Springle the chopped dark chocolate on top of the muffin mixture
-Bake for 18-22 minutes or until you can insert a skewer and it comes out dry
-Let cool before digging in
