I didn't post anything last week and now I'm going away for the weekend and wont have internet access on Sunday, so I feel the need to compensate. So, here is a recipe for some very simple bread rolls that are layered with cheese and olive oil. Great to start off a meal or as an afternoon snack. They don't take too long and they're really amazing.
Cheese bread-rolls
Ingredients:

- -3 tablespoons sugar
- -1 package dry yeast (about 2 1/4 teaspoons)
- -1 cup warm milk
- -3/4 teaspoon salt
- -2 tablespoons butter, softened
- -2 tsp olive oil
- -1/3 cup grated cheese
Preparation:
- -Dissolve sugar and yeast in warm milk in a large bowl and let stand 5 minutes.
- -Add flour an melted butter in a couple of times and knead to form a dough until smooth. It might be slightlty sticky.
- -Cover dough with plastic for 10 minutes.
- -Roll out dough into a 12 x 10-inch rectangle on a lightly floured baking sheet. Gently spread half of the olive oil and cheese over dough. Working with a long side, fold up bottom third of dough. Fold top third of dough over the first fold to form a 12 x 3-inch rectangle. Cover with plastic wrap; place in freezer for 10 minutes.
- -Remove dough from freezer; remove plastic wrap. Roll out dough into a rectangle and spead the other half of the butter and cheese. Working with a long side, fold up bottom third of dough. Fold top third of dough over the first fold and then press a bit to close and cut into squares.
- -Cover and let rise in a warm place (85°), free from drafts, 45 minutes or until doubled in size.
- -Preheat oven to 375°.
- -Bake dough at 375° for 20 minutes or until golden brown. Remove from pan, and cool for 5 minutes on a wire rack. Serve rolls warm.
