Tommy is back from his trip to NZ and he brought lots of great stuff for our kitchen collection. Amongst the gifts and stuff he got, is an Edmond's recipe book, that from what I hear, is kind of the kiwi cooking bible. We were browsing through some stuff and decided to try out a recipe for cookies by Edmonds. I instantly loved the name of these so I went for them. They're really easy to make and take no time at all. The dough ends up pretty close to any other cookie dough around, but instead of starting with creaming the sugar and butter, you go the melting method. They look very cute with the fork dent impressions on them.
Hokey Pokie cookies
Yield: 2 dozen small cookies
Ingredients
-1/4 cup sugar
-3/4 cup flour
-50 gr butter
-1 tsp golden syrup
-1/2 tsp salt
-1 small tsp baking powder
-1 tsp milk
Instructions: Combine sugar, butter, golden syrup and milk together in a small saucepan and bring to almost a boil and sugar is melted. Let the mix cool for a bit and then add the dry elements sifted. Mix well and roll tablespoons of mixture into balls and place on ungreased baking sheets. Then use a floured fork to flatten cookies. Bake in a 180 C oven for about 10 minutes or until golden brown.
