Long overdue update. Ive been in Europe for a month and have ignored my poor blog ever since my departure. Now that im back I'll try to make it up to you by posting a little more often hopefully (if my piled up work allows me to do it). Lets start of this Sunday Baking make-up with a super easy cookie recipe: Cornflake a chocolate cookies. All you really need to have is some almonds or peeled roasted nuts, cornflakes, chocolate, an egg white, some baking powder, flour, and off you go...
Ingredients:
1 cup of cornflakes, crushed, plus a litte more to roll cookies
1 egg white
1 tsp of baking powder
1/2 cup flour
90 grs of chocolate, chopped
45 grs of peeled roasted almonds
white icing to decorate (optional)
Instructions:
-Preheat oven to 170C
-Place chopped chocolate in a bowl over simmering water, melt and set aside to cool slightly
-Meanwhile mix cornflakes, crushed almonds, flour, baking powder and egg white
-Add melted chocolate chocolate to finish making a stick paste
-Form balls of dough and roll over more cornflakes
-Bake for 7-10 minute in 170C oven
-Let cool and decorate with icing (optional)
