Im squeezing oranges to make myself a fresh-sqeezed-orange juice with lots and lots of ice. Suddenly it dwans on me. I should squeeze even more oranges and make orange cupcakes. Yes! Orange cupcakes with chocolate frosting and some shredded coconut on top. Mmm, soft, super moist. I want one now! You want one too, what are you waiting for?!
Orange Cupcakes
(Rinde: 12 cupcakes o 20 mini cupcakes)
Ingredients:
-110 gr butter (room temp)
-130 gr os sugar
-3 eggs (room temperature)
-200 gr flour
-2 tsp baking powder
-1 tsp salt
-1/4 orange juice
Instructions:
-Beat butter till light and fluffy
-Add sugar, and beat until well incorporated
-Add eggs one by one, making sure to mix well in between
-Add orange juice and orange extract
-Fill cupcake papers 2/3 fullBake 15 to 18 minutes in 180C oven
-Let cool before decorating
-For the frosting, beat butter with vanilla til light and fluffy. -Fill cupcake papers 2/3 fullBake 15 to 18 minutes in 180C oven
-Let cool before decorating
-Sieve sugar and cocoa pwder and add to the butter alternately with the milk.
If its too runny, try more sugar, if its too tough, more milk, e voila! Forsting for you, and me !
