Majo really really loves cinnamon. If something has cinnamon, then it must be good is her thought, so when she called and suggested hanging out I invited her over for Cookie Sundays and decided to give her a treat. She sort of wanted cinnamon rolls, but I needed something new for the blog, so I improvised. These mini muffins turned out to be a delight. Few ingredients and just a couple of minutes for mixing and baking. A total winner!
Cinnamon mini muffins
(Yield: 20 mini muffins)
Ingredients:
-100 gr cold butter
-100 gr sugar
-1 egg
-200 gr flour
-1 tsp baking powder
-1/2 cup of milk
-2 tsp cinnamons
-2 tsp nutmeg
-Topping: 2 tsp cinnamons and 2 tsp sugar
Directions:
-Beat butter and sugar until pale and fluffy
-Add the egg and mix well
-Sift flour, baking powder, cinnamon and nutmeg
-Add half the milk and half of the dry mix ingredients to the butter sugar eggs...
-Mix until just combined (dont overmix!)
-Add the rest of the milk and the dry ingredients, mix until just combined
-Fill greased cupcake mold 2/3 full, sprinkle with topping.
-Bake for 7 minutes in 180C oven
-Once out of the over drizzle with melted butter and add more topping
-Let cool, enjoy!
