Ive got a confession to make... this recipe is not actually a recipe for madeleines... its coconut cake batter made in madeleine molds... no separating eggs or folding gently to leave anything fluffy... this is the stuff you can make with the kids and its completely foolproof... The downside? It aint really madeleines.... the up-side? They're just as good, 10 times easier, and a crowd and children pleaser.Trust me... you want to make these....
Coconut non-madeleines
(yield: 24 madeleines)
Ingredients:
-1 cup of cake mix
-1 egg
-10 tsp milk
-2 tsp coconut essence or oil
-5 tscp shredded coconut
-1 tsp butter and 1 tsp flour for molds
Directions:
-Preheat oven to 160 C
-Mix butter and flour to form a paste, and spread on mold to avoid batter from sticking
-Beat cake mix with egg and milk, add the coconut essence and shredded coconut (optional)
-Fill mould half way full and bake for around 15 minutes.
