Honey syrup cookies

I had a midnight cookie craze last night. I had just finished watching all the available episodes of MasterChef Australia Season 3, and Tommy was busy with his game, so I thought, ok, cooking time. Since we had had chinese take out for dinner, the kitchen was sparkling clean and demanding some flour and atenttion. I didnt feel like browsing for recipes so I took whatever was in hand and I started mixing in a bowl. Butter, sugar, egg, flour, baking soda, salt, honey, corn syrup and a half hour later I had thee beautiful small rounded shaped cookies that looked pretty close to picture perfect. I also added 80% cacao chocolate bits and orange marmalade to part of the batch. You should try these. Seriously, try them. Bake them, eat them. Cookies...




Here's the recipe:
Honey Syrup Cookes
Yield- 4 dozen mini cookies

Ingredients
-1 cup of flour
-1 tsp of salt
-1 tsp of baking powder
-3/4 cup sugar (can be a mix of white and brown)
-1 egg
-50 gr od butter
-2 tsp corn syrup
-2tsp honey

Instructions:

-Cream butter, honey syrup and sugar together
-Add the egg
-Sift all dry elements and add in 3 or 4 times
-The dough will be dry enough to give shape to little balls, that will make the shape of the cookies look really neat around the edges
-Bake at 375 F / 190 C for around 8 minutes.

Note: For the chocolate and organde marmalade batch, divide the dough into two and add a couple of tsps of marmalade and chop up some chocolate and mix into the dough. These part of the dough will be too sticky to shape, so just scoop!
