I had no idea of what I felt like baking today, so I asked the boyfriend to choose a recipe for me. There was no beating around the bushes, he opened my Cookie Bible, went through a couple of chapters and pin pointed this streusel cofeecake squares. The original recipe included nuts in the srteusel mix, but I didnt have any so I just skipped them; Id guess they'd go very well adding a cruch factor to the streusel. Its a very straight forward. recipe. Doesnt take much ingredients nor too long in the oven! You can start smelling the butter melting from the streusel around minute 10 creating a little anticipation and by minute 20 you'll want to slide it out of the oven to take a bite! Hold that thought, you only need around 5 extra minutes for that.

For the topping:
Instructions:
-Preheat the oven to 180C
-Cream butter and sugar and beat until light and fluffy
-Add egg and beat well
-Sift dry ingredients
-Alternate adding sour cream and dry ingredients
-Mix ingredients for the topping, to form a mixture resembling bread crumbs
-Pour half the batter into a mold, add part of the topping mixture, add the other half of the batter and finish off with the topping
-Bake in the over for around 25 minutes.
Streusel coffeecake loaf
Yield: 1 loaf or 12 squares.
Ingredients:
60 gr butter
75 sugar
1 egg
3/4 cups flour
1 tsp baking powder
1/2 cup sour cream
For the topping:
70 gr dark brown sugar
2 tbsp cinnamon
50 gr butter
3 tbsp flour
