How cup of tea + a slice of this warm banana cake + movie = perfect Sunday.
Woke up early and with a rush of energy this morning. Went out for a walk down the riverpath, went grocery shopping, came back home did some laundry, cleaned up the house and then spent the rest of the day in the kitchen.
When I was at the supermarket I saw bananas that looked a little mushy and I thought, Perfect! This is going to be my ingredient of the day for the blog. Then I started playing around with ideas and decided to go for a wamr banana cake with coconut and vanilla frosting. A super simple recipe that calls for cake mix and easy to find ingredients. Takes a little time to bake but its worth the wait.
Ingrdients:
3/4 cup cake mix
10 tsp of milk
1 egg
1 tsp of baking powder
1 over-ripe banana
1/4 cup shredded coconut
1 tsp vanilla essence
1 tsp caramel sauce
For the frosting
1 cup of confectioners sugar
1 or 2 tsp of milk
1 tsp vanilla essence
shredded coconut
Directions:
-Preheat oven to 160C
-Beat the egg, milk and cake mix
-Put banana in food processor and then add it to the previous mix
-Add caramel, vanilla essence, coconut and baking powder
-Beat for about 5 minutes until the batter is really light and airy
-Grease a mold with butter and add a little flour to prevent batter from sticking
-Cook for around 40 minutes or until you can put a knife through and it comes out clean
-Let the cake cool before frosting
-For the frosting beat all ingredients together.
-Enjoy!
