Tuile Cookies

When time for baking comes, Tommy usually vouches for some sort of crunchy cookie... Usually I like my cookies on the chewy gooey side (when talking chocolate chip). But, today I felt like making something he'd appreciate, as a treat for sending me into the kitchen when I was too tired to face the heat (we only have air conditioner in our room). I decided to make tuiles, which I havent made in a very long time. These are super simple and fast to make, they use few ingredients and the only down side is that you'll want to have a dozen of them and that if you make a big batch youll end up with egg yolks (not a problem if you want to make pot the creme later)... so, lets go to the recipe. 


Tuile Cookies recipe
Ingredients
-1 egg white
-25 gr confectioners sugar
-25 gr cooled melted butter
-25 gr flour

Instructions
-Preheat oven to 200C
-Beat the eggwhite until you can form soft peaks
-Add the sugar and continue beating to form a glossy mixture (like a meringue)
-Add part of the butter and flour to the mixture
-Fold in and continue to add the rest of the butter and flour 
-Spread small spoonfools of mixture onto a baking sheet lined with parchment paper
-With the back of the spoon make the mixture into thin circles
-Bake for 7 minutos or until golden
-Try to separate the tuiles from the parchment paper while still warm, or they might stick a bit.
