Another lazy Sunday. This one's specially lazy after b-day and party weekend! Yesterday was my b-day so I had friend over friday night, family over of tea yesterday, then a dinner party and another friend's b-day on top of that. Little sleeping, too much food and over drinking a bit, so Sunday has to be my recovery day and therefore Im extra lazy. Tons of leftovers and cake. No need for getting busy in the kitchen too long before getting back into bed. Cheesy tomato scrambled eggs con toast and ham and cheese croissants... Here's my fool-proof scrambled eggs recipe for any given Sunday.
Scrambled eggs (for two):
-3 eggs
-Splash of milk
-1 small tbs of mustard
-Salt, pepper, garlid and dried chilli to taste
-1 tomato diced
-Basil
-Shredded cheese
Beat eggs with all other ingredients except for the cheese and tomato. Heat a pan with a little olive oil and add half the eggs mixture. Mix well while its cooking, when its cooked almost through add cheese and tomato, then finish with the rest of the egg (this allows the last part of the egg to be super moist, and other parts of the eggs being a little more cooked add texture)
Serve with warm bread or toast....
