If there is butter involved, then it must be good, if its cookies, then I want some, and if you dare combine those two words, then there's not way of saying no, is there? Butter cookies are crunchy, crumbly, satisfying, and its pratically impossible to have just one... These recipe is super simple, calls for very few ingredients and can go directly from your freezer to the oven if you want to make a large batch and save a few for when you have no time but want to offer your guests something nice. Lets go to recipe, shall we?
Butter Cookies
(Yield: 25 small cookies)
Ingredients:
-100 gr of butter
-45 grs of sugar
-100 grs of flour
-zest from 1 lemon
-golden sugar (or granulated sugar with food yellow food coloring)
Instructions:
-Cream butter and sugar until light and fluffy
-Add lemon sezt or lemon essence
-Add flour and form into a ball using your hands
-Shape into a log, flattening sides to make it square
-Roll the log on golden sugar and let cool in fridge for around 30 minutes or until firm
-Cut into desired thickness (in between 5mm and 1 cm works perfect)
-Preheat oven to 170C
-Place cookies on an ugreased cookie sheet lined with parchment paper
-Bake for 20 to 30 minutes or until they slightly start to turn golden.
-Let cool.. then have one
