Sunday with friends... suggestions, cravings, recipe ideas... someone suggested caramel bars, someone else asked for lemon something, and I came up with key lime bars... They're an adaption from a key lime pie recipe I make sometimes. Completely foolproof and absolutely delicious! Easy peasy and done in a relateively short time... They play winning, I cook, write, share!
-100 gr of sweet biscuits. I used butter cookies but oreos would be awesome!
-30 gr of melted butter
-3 tsp of butter
-3 tsp of butter
-2 yolks
-200 ml of condensed milk
-60 ml of lemon juice
-1tsp of lemon essence
-60 ml of lemon juice
-1tsp of lemon essence
-Grind cookies in a food processor
-Add sugar and melted butter
-Spread on a baking sheet and press well
-Leave in fridge until firm, and then bake in a 180 C oven for about 10 minutes or until starting to turn golden
-Chill in fridge
-Meanwhile, beat yolks until light and fluffy, add condensed milk and lemon juice mixing well but without incorporating any air
-Spread mixture over chilled crust, and bake for 15 to 20 minutes at 170C
-Let cool in fridge until firm and then slice into bars
