This weekend I did quite a bit of experimentation in the kitchen. Trying out recipes, inventing new stuff out of old ideas... One of the bright ideas I came up with on Sunday was making lemon powedered bites from a cheese melting porcelain tray that I have. The batter is sort of an in between a cake and a muffin, with lemon rind and covered in gorgeous white powdered sugar. They're small, cute, perfect to serve with coffee... Try them out, the bites wont bite hehe..
Lemon bites
-Preheat oven to 160 C.
-In a bowl, mix: 1/2 cup of flour mix, 5 tsp of milk, lemon zest from 1/2 lemon.
-Place small tsps of the batter into greased molds and bake for around 15 minutes.
-Let them cool before rolling through powdered sugar.
